Homemade Meat-Pie Recipe

When you have kids and you work from home as a mum, you should make attempt at baking your kids snacks. By doing that, you know what goes in and it's Nutritional value to your kids and the family.

Most times those commercialized snacks can be dangerous to our health with this reasons below.

Environment: Unless you know the environment where the pastries are made, you will agree with me that it can POSE hazzard health risk to your kids and other members of your family. The water might be contaminated, there might be defecation hanging around where the pastries are made. Rotten Eggs and Veggies might be used, Etc. 

Source: you won't be certain if the flour, sugar, butter are in good condition and have life span for consumption. There are tendencies that expired goods will be used for making and baking those pastries we buy for our kids.

There's always a start filled with failures but don't give up and continue trying till you get it right or you enroll in a pastry class to learn how to make them.

I am sharing my meat-pie RECIPE for any one interested and please you can contribute to the post by sharing your thoughts on the comment box.

MEAT-PIE is a Nigerian snack that are served in parties and any other celebrations. People snack on it as a fast food when famished with hunger and it usually goes with a soft chilled drink, juice, zobo, Etc. 

Ingredients
For filling  (I didn't load it)
▪2 medium size carrot
▪3 Irish potatoes
▪1 medium onions
▪I knor cube
▪Salt  to taste
▪4 pcs of Beef  meat ( I grinded it myself)
▪1 tsp rosemary grinded preferably
▪1 tsp  curry.

For pastry
▪3 cups flour
▪1 tsp baking powder (optional)
▪2 tbsp sugar (optional)
▪100gm margrine
▪Half cup room temperature water plus extra little.

Directions
▪Grind  your beef with onions together.
▪Cut your carrot and potatoe wash and boil, add your beef.
▪Boil till soft and the water dried.
▪Add 2 tablespoon veg oil, seasoning, salt, rosemary, curry.
▪Mix 2 tbsp of flour with little water to get a loose batter, pour it inside your veggies sauce for hold (This optional  but most people do this).
▪Stir till it incorporates, Bring down and allow to cool.
▪In A big bowl sift your flour and baking powder, add sugar, salt and butter.
▪Mix to incorporate the butter, add water and mix to get a soft dough that is not sticky.
▪Cover and put inside the fridge for 20 mins.

Cutting
▪On a floured Board cut the size of dough you desire, roll it to get a circle shape you can place it in a meatpie cutter or you add your sauce manually.
▪After you are done, egg wash and bake until golden brown on low heat at 190°

Marble Cake Recipe

Saw this recipe on a Facebook Group for Cake Bakers. so I decided to try it out.Below is the original Ingredients used 

Ingredients:

■Flour(3 cups)

■Milk(1 cup of powdered milk)

■Egg(I used 8 big eggs)

■Butter(250g)

■Sugar(1 cup)

■Baking powder(1 spoon)

■Preservative(half spoon and 2 tbsp)

■Nutmeg(1tsp)

■Flavours(I used milk, vanilla n banana flavours)

■Colours(blue and pink)

And here are my Ingredients I used with some exceptions from the original recipe.

Flour
                                     3 cups of flour and 1tbsp of baking powder

Eggs
                                7 medium sized Egg plus extra one I added later

Milk

Margarine
                                                     

Sugar
                                                             1 cup of sugar

Spice

Cup

Bowl

Pan

Flour

Batter

Marble

Cake


Verdict: it came out moist and light. Not too heavy.
The kids love it.

We Love Cookies, New Recipe

Today am sharing my CRISPY cookies RECIPE. The kids were on holiday and snack a lot apparently I was baking alot of snacks for them which I will share with you in another post .So on this very day, I decided to bake cookies, I got my RECIPE Manual and set out to bake. With the listed ingredients below I made a crispy cookies of different shape with its cutter.


Ingredients:
2 and half cups all purpose flour

Half cup sugar but if you want it very sweet use 1 cup sugar

1 cup  butter or 225g butter

1 tsp vanilla (optional)

A pinch of salt.

1 egg yolk.

15ml cold water.

1 tsp baking powder (optional)


Directions:
Sift flour and  baking powder in a clean and dry bowl,  add sugar, salt and combine. Add butter, egg yolk, vanilla. Mix with hand very well until fully combine add the water and fold in. Cover the bowl or rap the dough in a foil and refrigerate for 1 hour. Then flour your board pay the dough and spread it with the rolling pin and roll the dough until smoothly combined. Cut your desried cookie size and lay it on a baking sheet. Bake in a preheated oven at 190 degrees, max 20-25 mins or until golden brown.

Nigerian Buns Pastry

Buns is one easy and fast snack to make only if you get your measurements right. it takes 20-25 mins to serve hot tasty buns.

For those that doesn't know what BUNS means, it's an African pastry that requires frying.


I really don't know where the word BUNS originated from but many of us grew up to know that it is called BUNS and it's a very nice tasty snacks that when eaten with cold soft drinks keeps you filled up.

There are 2 methods but I am sharing the second conventional method that are mostly served as small shops in occassions.

Ingredients:

2 cups of flour

1 teaspoon baking powder

1 small Egg [optional]

20g Margarine

3-4 tablespoon sugar

A pinch of salt

1 tablespoon powder Milk

A dash of Nutmeg [optional]

1 cup of Water

Directions:

Sieve the flour and baking powder

Mix in Margarine with hand till its incorporated into the flour

Add the sugar, salt, milk and nutmeg

Add the Egg, pour in half of the water

Mix it together until you have loose batter, not runny

and no lumps, which means everything blended in well.

Heat your oil on medium heat, rinse your hand in water and scoop the batter with your wet hand [ this process is to avoid sticky batter on your hands and it will drop freely inside the oil].

Fry and turn it at intervals till all cooked and are golden brown.



Tips: If your batter is heavy add a little water.

it is better to add water little by little so that it will not be runny.

6 Smoothie Recipes For Good Health

Smoothie is a drink for an energy boost, it is easily prepared with fresh fruits and veggies. Smoothies are packed with healthy good vitality, in preparing it you can add yoghurt as a thickener, ice cream or alcohol for great treats.

Smoothies taste great if they're served chilled, you need to make sure that your fruits and veggies are chilled before blending it with your smoothie maker. If you are using a sweet fruit, then you won't be needing any sweeteners buta a dash of honey isn't bad to add.

Below are 7 smoothies  that are healthy with fresh natural goodness and vitality.

● PAPAYA AND PEACH NECTAR   

Ingredients

400 ml Grapefruit juice chilled

I big Papaya, de-seed,  halved and chopped

410g Peach sliced

Water [optional]

Directions

Pour the grapefruit inside your smoothie blender, add the Papaya and peach.

Blend on low for 10 seconds, then on high for 25 seconds. If it's thick, add little add a little chilled  water and serve.

WATERMELON COCKTAIL  

Ingredients

200ml chilled Orange juice

Quarter cut watermelon

Mint to garnish [optional]

Directions

Pour the Orange juice in the smoothie blender.

De-seed the watermelon, chop and add in.

Blend on low for 10 secs  and to high for 20 secs serve in a cup and top up with the mint.

●AVOCADO AND PEAR  

Ingredients

400 ml chilled white grape juice

1 Avocado peeled and chopped

1 recipe Pear, peeled, cored and chopped

1 lemon squeezed juice

Directions

Add the grape juice, avocado and Pear in the blender.

Blend on low for 10 secs, squeeze in the lemon  and blend on hight for 20 secs, serve in a glass.

BEETROOT AND CARROT BUZZ   

Ingredients

200ml chilled apple juice

100 ml squeezed Orange juice

100g cooked baby fresh beetroot, halved

1 top grated fresh ginger

3 baby carrots grated

Directions

Pour in the Apple and Orange juice in the blender.

Add ginger, beetroot and ginger.

Blend on low for 10 secs, then on high for 30 secs.

Serve and garnish with celery leaves [optional].

BANANAS NUTTY PEACH BOOST 

Ingredients

400 ml chilled low-fat hazelnut yoghurt

300 ml chilled milk

3 dried sweet Peaches, chopped

2 bananas, peeled

Directions

Place the hazelnut yoghurt,  milk and chopped Peaches into the smoothie blender,  slice in the bananas as well.

Puree for 10 secs on low and 30 secs for high, serve right away.

SUMMER FRUIT CRUSH   


Summer fruits includes

▪ Apricot

▪Blueberries

▪ Mangoes

▪ Plums

▪ Peach

▪ Blackberries

▪ Cherry

▪ Grapes

▪ Cantaloupe

▪ Strawberries

And many more.....

Ingredients

300ml Cranberry juice

75cl Cherry brandy

200ml Frozen summer fruit

Directions

Pour in Cranberry juice, cherry brandy inside the smoothie blender, Add in the frozen summer fruits.

Blend on low for 10 secs and then on high for 30 secs, and serve.

Easy Vanilla Muffin

My love for baking my kids snacks can't be rated. I feel that every Mom should endeavour to make their kids snacks, majorly school snacks.
Homemade snacks is the best as far as I am concern, [case study] - i was giving my kids store bought juice. My LO was consistently Stooling, I was administering drugs but it couldn't stop but was managed. Not until one day I just said to myself no more proccessd juice and biscuits and other snacks, prior to when i made the decision i was baking occasionally.
This muffin that am sharing the recipe below is good for the kids.



Store bought ain't bad, but let's face it you can't vouch for the ingredients used, it's source, the hygiene factor nor how healthy it is for kids.
Immediately I stopped packing juice in their lunch box, the stooling stopped till date.

why am I saying this, is just to encourage parents especially Moms to try as much as possible to bake the kids snacks. Its benefits are awesome, you can tweak it, reduce quantity of sugar, use oats or other healthy flour instead of all purpose flour, use cholesterol free vegetable oil in place of margarine or butter.


 Ingredients:

1 and half cup flour 

1/2 cup of sugar or 

1/2 cup of liquid milk

1/4 cup of veg oil

1 egg

1tsp of baking powder

1/2 tsp of salt

1 tsp of vanilla essence


 Directions:

Add the vegetable oil and in a mixing bowl, whip very well until fluffy, add in egg and whip. if you are using a mixer to mix do not mix on high speed and do not mix for long time, 5-10 Mins is ok.
Sieve in the flour and baking powder together in a mixing bowl, add salt milk and vanilla and mix until it's well mix. Bake at 150° for 30-35 mins or until its done, you can use the toothpick checking method.

Guest Post- Fluffy Homemade Doughnuts

It was a sunny afternoon, I was bored and jobless.
So I said to myself "Akpos do something", immediately I fetched my baking materials. The end product is this fluffy, yummy and irresistible doughnut.



Recipe
1 tbsp margarine
½ cup milk
2 tbsp sugar
¼ tsp salt
1 egg
1 tsp vanilla essence
1 tsp yeast
1½ cup flour.
Warm water
Cinnamon powder
Extra sugar


Directions
Add sugar and salt to the warm water.
Sprinkle the yeast on the sugar mixture. Cover with napkin or nylon and allow to activate for 10-15 mins.
Add the milk, vanilla and egg. Whisk together.
Add the melted butter and whisk thorough.
Gradually add the flour, mix until a sticky dough is formed.
Transfer the sticky dough to a floured surface and knead for about 15 mins or until the dough is soft and elastic.
Cover the dough in a warm place to prove for 40mins or until it double its size.
After 40mins, open the dough and remove air bubbles.
Knead again and cut into desired shapes.
Cover the cut dough for 20 mins
Fry in hot oil (deep frying) until it's golden brown.
Place the cinnamon and sugar in a bag.
Shake together.
Add the doughnuts in batches and shake till the mixture is evenly distributed.
Serve and eat like a King/Queen.

Guest Post: Akposy Braided Bread Recipe

I was inspired to make this bread after Chef Stone of Reddish Chronicle posted his braided bread on his instagram page. I kept saying to myself "I can do it" and I did it!

It's my Vanilla Milk Braided Bread!!!

Ingredients:

½ cup warm milk

½ cup white sugar

½teaspoon salt

½ active dry yeast

2 large eggs one kept out to brush on top of bread

¼ cup butter soften

2¼ cups all-purpose flour plus extra for kneading

1 teaspoon vanilla essence

Directions:

1) Add sugar and salt to the warm milk, mix together.

2) Sprinkle the yeast on the surface of the mixture. Cover and allow to activate for about 10mins.

3) Add in the egg, vanilla and butter. Also add the flour. Mix thoroughly till the dough is formed.

4) Transfer the dough to a floured surface and knead till it is smooth and elastic.

5) Cover and allow to prove for 50mins - 1hr.

6) Re knead the dough. Cut and braid.

7) Cover for another 30 mins. Coat with the egg wash.

8) Bake in a preheated oven for about 10   - 12mins.

Homemade Soft Bread

I love HOMEMADE Food be it snacks, Staple Foods or Bread. I try my hands on any new FOOD I found out as long as the ingredients are available in my country of origin.

There was a period in Nigeria that cost of cosumable goods where high both raw materials and its end products, due to RECESSION.
I was buying BREAD at a high cost all because flour price was inflated. And my family's bread consumption was at an alarming rate which was making me spend hugely on bread every week-days.

So one good day I sat down and say to myself I was going to try my hands on making HOMEMADE BREAD, I have a mixer and gas oven including bread pan that I was using in baking cake. So I went online and searched for bread recipes, I got so many and that was how my HOMEMADE BREAD journey began.

My first bread wasn't bad but it was not the perfect bread as well, second came, third and not till the fourth attempt that I got it right. Soft not too stretchy and nice tasty bread.

So I took a picture of it and shared it on Nairaland Forum where I visit for others who were going through the hard RECESSION that we were faced with at that period.

Here is the bread recipe for anyone who might be interested in making HOMEMADE [DIY] BREAD.

YOU WILL NEED:

4 cups flour

1/2 tsp salt

2 tsp yeast

2 tbsp oil

1 cup water plus 2tbsp

2 tbsp sugar or more

1 tbsp milk powder

1 tbsp low fat margarine or butter..

Directions:

If you have a mixer and it has bread hook, then, Shift your flour in the mixing bowl, add your sugar, salt, yeast, milk and butter.

Mix with hand, make a well in the flour and pour in your water, oil and add any flavour of your choice if you want max half teaspoon.

Mix by hand or with a spatula. When it's folded attach your bread hook to your mixer and start kneading it for 8 -10 mins.

Bring your bowl out and cover very well for 1 and half hours.

Take back to knead again for 3-5 mins more. Flour a suface or kneading wood and knead by hand to make sure it's not sticky then roll like a ball and spread it long to fit into your already greased pan. Place the dough in the pan and cover for 45 mins to 1hour.

Then bake in a preaheated oven in medium heat for 30- 35 mins or until the bread is done. You can do egg wash before baking or after baking you melt little butter and run on top of the bread and allow to cool.

For Preservation:

Your bread won't go stale for atleast 3-4 days if you put in the fridge. But if you want to keep for a week to weeks then you can add rum or powderd preservatives.

NB. Please the water should be room temperature.

If you are using hand, then knead it for 10-12 mins and knead for 5 mins the second time on floured surface.

Crispy Homemade Butter Cookies

When the kids are on holidays, I tend to bake for them as much as i can. It is also an avenue of bonding with them as we all tend to cook, bake and gist.
So many mommies can testify that cooking with kids is a great task because you will answer questions alot, give explanations to things confusing to the kids.

In as much as it's a daunting task, its a great way to know your kids sense of reasoning, expressions and areas of interest. My kids have interest in cooking, Ooh they want to cook everything even at early stage, which is why I cook with them so they can learn fast.

And I so much love to bake snacks for my kids both for home use and school. This crispy butter cookies is one of the easiest cookies with less ingredients. Though I won't deny the fact that is unhealthy when consumed regularly, but once in a while won't hurt, right?

RECIPE BELOW

Ingredients:

2 1/2 cups of all purpose flour

125g butter or margarine

125g Sugar or 1 cup

1 Egg

1teaspoon vanilla essence

1 teaspoon baking powder

1/2 teaspoon salt.

Directions:

Sieve the flour and baking powder in a mixing bowl, add sugar and salt and mix with hand.

Add butter or margarine, egg and Your vanilla or any flavour of your choice.

Mix all together to get a soft buttery dough

cover and put in your fridge for 30 mins -1hour.

Bring the dough and cut to any shape of your choice, use fork or toothpick to prick little holes on the dough. spread a baking sheet or paper on your baking tray and line your cookie dough on it. Bake at 150-180 degrees that means medium heat [depends on your oven temperature setting]. Bake for 25-30 mins or until golden brown.

Tips: you don't need to knead or flour the cookie dough anymore.

Fluffy Homemade Pancake Mix Recipe

Have you ever craved for a fluffy light pancake but you don't get the right mix for it? Well that has been my case for years until I discovered this mix.

So here, want to share My fluffy tasty pancake mix, the best that I have used.

Actually In my pancake recipe journey, I discovered this recipe and I promise you it's great and you should give it a try. Kids loves it, yeah my kidos do.


First off I did a pancake mix to be able to get the perfect pancake cos I have tried so many recipes that turned out imperfect for me. The mix can be stored in an air-tight container and can last for 3 months which I think you won't keep up to.

For The Mix Ingredients:
•5 cups flour
•1 1/4 cups of powdered milk
•1/2 cup sugar
•1/4 cup baking powder
•1 tablespoon salt.

Directions:
•Sift flour and baking powder in a big bowl
•Add sugar, milk, salt.
•Mix well and store in an air tight container.

So to make a fluffy pancake for breakfast, You just need the take the measurement below

Fluffy Pancake Recipe:
•Measure 1 cup of mix
•1 egg
•1 cup of warm water( that's if you want a light pancake) but if you prefer heavy one reduce the water.
•1 tablespoon veg oil or coconut oil
•A pinch of cinnamon if you desire.

Directions:
•Put the pancake mix in a bowl
•Add your egg and half of the 1 cup of water
•Mix to a paste, add oil and the remaining water.
•Mix very well.
•Heat ur pan in a medium heat.
•Put small oil allow to heat
•Pour batter in allow to cook
•flip the other side and cook till golden brown

CupCake With Hershay's Chocolate Syrup

So recently went Grocery shopping and spot this Chocolate syrup on the counter, so I picked it up, paid and went home.



My kids Love Cupcake, so I made some batch for school snacks Tomrrow.
Below is the Recipe for this moist fluffly yummilicious cupcake. Being that it's my first time to use the syrup, I added little just to check out the end product.

INGREDIENTS:

1 1/2 cup All purpose flour

175g Margarine

150g White Sugar

3 Medium size Eggs

1/2 teaspoon Baking Powder

A pinch of Salt

1 tablespoon Powdered Milk flavour

1/4 cup Desiccated Coconut

1/2 teaspoon butterscotch flavour

2 tablespoon Rum

2 tablespoon Hershey's Chocolate Syrup

DIRECTIONS:

Whip Margarine and sugar in a mixing bowl and use a hand mixer to mix it for 20 mins.

Add Eggs one after the other and mix for 10 mins each.

Add in sieved Flour and baking powder, desiccated coconut, salt, milk flavour and mix on low speed for 5 mins.

Add in Rum and Butterscotch flavour, mix for 3 mins, and lastly fold in the Hershay's Chocolate Syrup and mix for 3 mins or until well incorporated.

Heat your oven at 150°, Line your cupcake pan with cupcake paper. I used a locally made cupcake cups. Fill in with a piping bag or scoop with an ice cream spoon if you have one.

Bake for 45mins or until it's done, you can do toothpick test.
